Egg, Matzo, Brie Sandwich.
Eating matzo for seven days has its upside. Try this simple, but incredibly delicious matzo, brie, and egg sandwich!!!
Start with one piece of matzo broken in half and three small slices of brie
Fry two eggs in butter over medium (so that yolks are semi-hard).
Quickly nuke the matzo and brie so that the brie gets melty.
Put your eggs on top of the half with brie, and salt and pepper to taste….
Cap it off with the other half of matzo, and eat immediately.
Enjoy it! As you eat the yolks, remember that G-d brought the Jewish people out from under a yoke of slavery!

Here’s another recipe…. Matzo apparently briefly softened in water, dipped in scrambled egg, and fried in a pan. It completes nicely with cottage cheese and dates!!!!
